equipment love: chicago metallic commercial jelly roll pan

For the cookies, I used a new cookie sheet from Chicago Metallic like this one. It worked like a dream—it's not marketed as nonstick but the cookies did not stick at all. Nonstick sort of freaks me out, so I'm glad this one works.

Oh, good to know! How do you feel about Silpats? Everyone raves about them it seems but I always hesitate to get one because my old-school parchment paper works. Love the equip review!

I don't own a Silpat yet (it's on the registry! it's so hard to keep myself from buying these sorts of things!)but I've heard that unless you're making something REALLY sticky, like candy, it's not that huge a help. You still have to clean the thing...

These cookies literally did not stick at all. There's a *bit* of butter in them :)

Silpat is definitely greener/cheaper than using lots of parchment and throwing it away...

But this pan literally had NOTHING sticking to it, and I used nothing but a light rub with the butter wrapper before the first of 8 or so batches. A relief, since I am supernervous about the health risk of heating up dry teflon, etc, and have banned it from my kitchen....

Cooks illustrated recommends light-colored cookie sheets over dark nonstick ones, because the dark finish encourages overbrowning.

They claim the Chicago Metallic is light enough to warp, but the one I got weighs a TON.
